Classic Pancakes - gluten-free vegan style

Jon and I have a Sunday morning tradition: pancakes. This Sunday, however, I'll be on a plane to DrupalCon Chicago, so we decided to do our pancake "date" this fine Saturday morning instead. We usually make our favorite gluten-free/dairy-free buckwheat pancakes, but this morning we decided to be more inventive and attempt for something more classic. The result? Classic style pancakes made with a blend of coconut and potato flours! They were delicious! They did have a sweet, coconutty flavor, which went very nicely with vanilla infused maple syrup and bacon.

Ingredients:

1 Cup Flour Mix:

  • 1 part coconut flour
  • 1 part rice flour
  • 1 part potato starch
  • 1 tsp potato flour per cup for a little extra flavor (optional)

1 Tbsp sugar
1 Tbsp baking powder (aluminum free is better)
1/2 tsp salt
1 Egg Replacer Egg
2 Tbsp oil (we use peanut)
3/4 cup Rice Milk (or more depending on texture)

Directions:

Mix everything together and cook on a griddle the way you like!
